Description
CNR-ISA-CC Collection preserves about 300 strains of lactic acid bacteria and 400 strains of yeasts. The strains are mainly isolated from the Mediterranean agro-food systems and typical fermented foods (sourdough, dairy products, wine and grape, cereals, whey) and human faeces. The main species collected among lactic acid bacteria are Levilactobacillus brevis, Companilactobacillus alimentarius, Leuconostoc pseudomesenteroides, Fructilactobacillus sanfranciscensis, Lacticaseibacillus casei, Lacticaseibacillus rhamnosus, etc. The main species collected among yeasts are Saccharomyces cerevisiae, Hanseniaspora guilliermondii, H. uvarum, Pichia kudriavzevii, Met. fructicula

Preservation Techniques
Cryo: For lactic acid bacteria, ultrafrezeer at- 80 °C and -20 °C in cryovials with cells in MRS broth medium and glycerol (20% v/v); For yeasts, -20 °C, in cryovials with specific medium (YPDb) and glycerol (20%). Fresh cultures: For lactic acid bacteria, refrigerator at 4°C in MRS soft agar medium; for yeasts, refrigeration at 4 °C in slant of YPD medium.
